Who Loves Cheese?

October is American Cheese Month! It’s a month to celebrate America’s cheesemakers! Do something this month to celebrate your favorite cheese! My personal favorite are cheese curds from Calkins Creamery. Located in Calkins, Wayne County, Calkins Creamery was born on the Highland Farm in 2006 and makes amazing artisan cheeses, straight from their own cows! Here are some fun facts about cheese:

Did you know? It takes 10 pounds of milk to produce 1 pound of cheese. When fresh cheese is pasteurized you can eat it right away, but if you prefer raw milk cheese, it needs to age for at least 60 days. That’s a long wait for a favorite cheese snack!

How do you prefer your cheese? Grilled cheese, mac-n-cheese, cheese sticks, cheese with fruit? Cheese is a great way to get extra calcium into your diet. Calcium is an essential nutrient for healthy bones and teeth!

Here’s a recipe I created. I hope you enjoy:

Super Easy Creamy Ham N Cheese Mac

1 + 1/2 lb elbow macaroni, cooked and drained

2 cups shredded Calkins Creamery Old Man Highlander (gouda-style cheese)

3 cups cream

1 stick butter

1 tsp ground mustard

1 tsp smoked paprika

½ tsp nutmeg

Salt, to taste

½ pound cubed ham

Melt butter in large stock pot. Add cream and shredded cheese, heat and stir slowly until steamy. Add seasonings and stir. Stir in cooked macaroni and cubed ham. Spread into greased baking dish or crock pot. Heat through. Enjoy!
