The Atlas pasta machine turns out cut pasta noodles on your kitchen counter. It has cutters for a variety of shapes including lasagna, ravioli and cappelini. It comes with vermicelli and fettucini cutters.

The often-copied machine is stoutly made from stainless steel and requires close tolerances to finely cut noodle dough. It should be stamped “Marcato” in Italy. Prices range from $70 to $100.


PASTA DOUGH

Up to 4 cups flour
4 eggs
1/2 teaspoon extra virgin olive oil

Mix 3 1/2 cups flour with eggs and olive oil. Add more flour if necessary to form a dough. Place on a floured board and knead by hand until satiny. Wrap in plastic wrap and allow to rest for an hour at room temperature before cutting.
