  • Maude Alley in Honesdale has a new addition in Alley Whey Cheese Shoppe. Located at 1023 Main Street, the shop offers a large selection of Calkins Creamery cheeses. “The owner is also a cheesemaker at Calkins Creamery and a chef by trade,” said shop manager Shirley Ortiz. “It makes everything we offer here really special.” The intimate shop is a one-stop cheese destination that includes long-standing favorites like Cowtipper and Smoked Moo Mozz. “We also offer a variety of cheese boards and knives,” Ortiz said. Also on the menu at Alley Whey is a variety of fresh pesto and tapenades expertly paired with a variety of cheeses. “We also offer a variety of gift boxes and platters,” Ortiz said, with upcoming specials coming for the holiday season. She said that while some shops pressure patrons into a purchase, Alley Whey is the opposite. “I want people to have a relaxed experience,” she said. “You can sample everything with no pressure to buy.” Alley Whey, which opened on Oct. 27, will be hosting a grand opening event on Saturday, Nov. 16 from 11 a.m. - 7 p.m. From 3 p.m. to 6 p.m., the cheeses will be paired with various wines supplied by Capra Collina Winery. About Calkins Creamery In 1841, the Bryant family established Highland Farm in the most northeastern portion of Pennsylvania, just a few miles off the banks of the Delaware River. Today, the dairying tradition continues on Highland Farm with fifth generation farmer, Bill Bryant, and his son Zack Bryant, and daughter Emily Bryant Montgomery, representing the sixth generation. They established Calkins Creamery on Highland Farm in 2007. Georgic is available at the Calkins Creamery retail store, 288 Calkins Road, Honesdale, in 8 oz. containers, and also is offered wholesale in 5 lb. containers. Additional, pre-flavored Georgic cheese dips, sold by the Creamery, include Olé, Garden and Italiano Gardenia.
