  • A substitute for spaghetti?

  • Week two found me down nearly four pounds. Having started back in November I am finding it easier to stick to a good diet. In speaking with one of the winners from a previous Weight No More challenge, I mentioned portion sizes and how I weigh my spaghetti to ensure I am eating the RDA serving size of 2 ounces. She replied, “That is great but you should try spaghetti squash, it's a great substitute for spaghetti.”

    When you hear someone say, "it is just like spaghetti" or "veggie burgers are just like the real thing," you can bet my fat butt they're not. In all fairness, spaghetti squash is good, but it is in no way anything like spaghetti unless the spaghetti is a week old. (Thank you Greg Little.)
    Spaghetti squash is a winter squash which means it has a hard outer skin to protect the flesh. By hard outer skin I mean, "Get a chain saw to cut it or prepare to sweat." I did not have a chain saw so I attacked it with the sharpest knife in my kitchen. After about two and a half hours and 4,500 calories it finally gave up the ghost. 25 minutes in a 400 degree oven with chicken stock was enough to render it completely harmless. Or so I thought!
    The process of scraping it with a fork to make the spaghetti, (smirk) from the spaghetti squash is best left to professionals. Scraping hot spaghetti squash is as dangerorus as cutting one in half. Even though it was dead, a battle ensued pitting me against the small yellow gourd. I must have been out of my gourd for attempting to scrape it while hot, but, I was hungry and there wasn't any lasagna around. Lasagna is a very reasonable substitute for spaghetti by the way.
    The spaghetti squash rendered a large amount of a yellow squash which resembled a shredded yellow Speedo. What can I say? I wear an extra large Speedo. I take the fifth on actually shredding it though.
    I set about eating as much as I could during the last week. I sauteed it with onions, ate it with meat sauce and cottage cheese and even used it in place of pasta with chicken scampi. My conclusion, I lost a fair amount of weight and it taste good if you like squash. However, it is in no way a substitue for spaghetti. Do you want to know what a good substitute for spaghetti is?
